Tasting Notes:
Eye: Seashell pink, pale and luminous with a clean, translucent rim.
Nose: Bright and focused: fresh strawberry and white peach up front, a high-tone note of white cranberry, and a cool, wet-stone minerality that suggests Bottelary’s light, sandy soils. The overall aromatic profile is transparent and delicate.
Flavour: Crisp and energetic: crunchy pink grapefruit and mixed berries introduce the palate, which then reveals a deeper core of raspberry. Tangy, driving acidity keeps the profile vertical while a fine, stony texture adds structure without weight.
Finish: Bone-dry and precise. A subtle thread of white pepper provides lift and definition, leading to a lingering mineral aftertaste and a clean, focused close.
Food pairings: Oysters or chilled shellfish (simple brine or citrus). Sashimi, ceviche or fish crudo with a citrus accent. Lightly grilled salmon or prawn skewers. Fresh goat’s cheese with herbs or a fennel-and-citrus salad. Bright, mildly spiced Asian dishes (think lemongrass, lime, gentle chili).
